Eggs in Purgatory

Who doesn't love brunch?? Eggs in purgatory is a brunch/comfort food. It's perfect to use up some extra marinara sauce you have, or make a quick one. I've made this as a late night snack and believe me, it can also cure a hangover! The eggs poach IN the spicy red sauce and after you sprinkle Parmesan cheese, dunk a piece of crusty italian bread in it. So simple but so good! 


You will need:

• 3-4 cups of marinara sauce (or any red pasta sauce will do)
• 2 eggs per person
• Parmesan cheese
• parsley chopped (for garnish)
• italian bread 
• salt and pepper

Start with a non stick sauté pan. Add the sauce on medium heat until starts to bubble. 


After its hot and bubbly, carefully crack the egg on the sauce and sprinkle with Parmesan cheese. 



Lower the flame and cook COVERED slowly without touching the egg for about 6 minutes. You want the yolk to be gooey on the inside. 


Carefully use a spatula and transfer to a plate or bowl. Add more cheese, parsley, salt and pepper.  Add some toasted italian bread, dip and enjoy!
