BBQ ribs and summer sides!

Summer is finally here!!!! Here is an easy recipe for fall off the bone ribs, creamy baked cornbread and loaded baked potato salad! Enjoy!

BBQ ribs
You will need about 2 1/2 lbs of pork ribs
Salt and pepper
BBQ sauce

Preheat oven to 325
• wrap a baking pan in foil
• season both sides with salt and pepper
• wrap ribs tightly with foil
• bake on 325 for 1 hour

 
Take ribs out after 1 hour. Unwrap and let cool. Now it's time to grill! Heat your grill to a medium flame and grill each side for about 10 minutes. Brush ribs with BBQ sauce and turn. Repeat 2 times each side. Take off the grill, cut into sections. The meat should be falling off the bone and juicy!



Creamy baked cornbread

1 can creamed corn
1 can whole corn kernels (drained)
1 cup sour cream
1/2 stick butter (melted)
1 egg
1 box Jiffy corn muffin mix

• preheat oven to 350
• in a mixing bowl, mix all the ingredients    together. Don't forget to drain the whole corn kernels! 
• butter or grease a baking dish
• add to baking dish and cover
•bake for 1 hour until the top is golden brown. 




Loaded baked potato salad

1 small bag of red new potatoes (quartered)
1 tablespoon mayo
1 tablespoon sour cream
1/2 cup chopped scallions
1/2 red onion diced
Salt and pepper
1 cup shredded cheddar cheese
6 slices of bacon

• fry up the bacon slices, set aside
• cut the potatoes, add to a pot of water, bring to a boil until the potatoes are fork tender
• drain potatoes, season will salt and pepper, chill in refrigerator until cold
• once the potatoes are cool, add the rest of ingredients. Add more salt and pepper to taste.
